Grilled Pineapple and Jicama Salad

Excellent with Spicy Pineapple Lime Shrimp tossed in!
Complexity Level:  Easy
Grilled Pineapple and Jicama Salad
What You Need:
4 1 inch Thick Slices of Pineapple
1 Jicama Root
1 cup Diced Watermelon
1/2 Red Onion, chopped
1 tbsp Olive Oil
1 Pinch Salt
1 Pinch Black Pepper
Juice of 1 Lime
1/4 Bunch Fresh Cilantro
2 Cloves Garlic, peeled
1 tsp Apple Cider Vinegar

This is quite simple!  While grilled your favorite foods, or even while grilling those amazing Spicy Pineapple Lime Shrimp Kebobs (right), Grill the slices of pineapple.  I like the grill them 10 minutes on each side, rotating at a 90 degree angle after 5 minutes to give those nice grill marks.  Let the pine apple cool.


In a food processor, add the garlic cloves, cilantro (as is), salt, pepper, lime juice, and vinegar.  Puree.  If this seems too thick, you can add a tsp of water.  Once pureed, slowly drizzle in the olive oil to emulsify.  If it is not the thickness you desire you can use more oil.  This will be the dressing for the salad.

Chop the pineapple, watermelon, red onion, and jicama, then toss in the dressing and let chill 30 minutes (you can serve right away!)  This refreshing side dish compliments those shrimp quite well, but is also great with salmon of chicken!
