Meatball Subs

Oh So Toasty!
MeatBall Subs
2 lb. Extra Lean Ground Beef
3/4 ream Saltines, crushed
2 Eggs
1 tsp Garlic Powder
1/2 tsp Salt
1/2 tsp Black Pepper
2 tsp Parsley Flakes
1 can Tomato Sauce (store brand, $0.99)
2 cloves Garlic
1/2 Onion (minced or if you hate onions 1 tsp Onion powder)
2 cups Shredded Mozzarella Cheese (Store Brand $1.50-$2.00)
1 Bag Rolls
2 tbsp Olive Oil

In a large bowl, combine beef, eggs, crushed saltines, salt, pepper, garlic powder, and parsley flakes. Once combined, roll into 1.5 inch balls and place onto a large baking sheet. Bake at 400 degrees Fahrenheit for 30 minutes, drain grease, and set aside.



Meanwhile, Heat Olive oil in a medium sauce pan, and begin to brown the minced onions.  Add the minced garlic when the onions being to brown. Pour in the sauce, add 2 bay leaves and 1 tsp Italian Seasoning (if using plain tomato sauce), and let simmer on low for 1 hour.

Remove bay leaves from sauce, and add the meat balls. Let heat for 10 minutes, then spoon the meatballs onto the subs, topping with heaps of cheese. Place the sandwich in the oven or a toaster oven to melt the cheese and toast the bread and viola! Thank you again Mr. Manager! You certainly know how to give a cook a good deal!!!
