Quinoa Avocado Salad

So Delicious.  So Fresh!
Quinoa Avocado Salad
What You Need

1 Cup Quinoa Cooked in 2 cups water, chilled
1 Avocado, sliced into small bits
Juice of 1/2 Lime
1 Roma Tomato, diced
1/2 Red Onion, finely chopped
Cilantro (about 1/3 cup chopped)
Salt
Pepper
Hot Sauce or 1 chili pepper minced

(I saved the shell of the avocado for plating --see picture!)

Mix the Lime juice, spices, hot sauce (or chili pepper) and all chopped/diced veggies in a mixing bowl. Fold in the cold quinoa. 


Serve with Grilled Chicken Breasts, over lettuce, in a lettuce wrap, as a side dish, or as pictured, in a cute little avocado shell. Simple. Delicious. Viola!


It's Hard to believe something can be Vegan, Gluten Free, and still taste Amazing!  Well.... BELIEVE IT!  This is killer!
