Three Pepper Slow Roasted Chicken

This is one easy way to make your neighbors jealous and your house smell good!

Three Pepper Slow Roasted Chicken
What You Need:
1 4-6 lb. Chicken
1 Red Bell Pepper, chopped
1 tsp Ground Black Pepper
1/2 tsp Crushed Red Pepper
1 Yellow Onion. chopped
3 Carrrots, chopped
3 Garlic Cloves, crushed
Salt
Garlic Powder
Olive Oil
Water
1 tsp Lemon Juice

Pre-heat the oven to 250 degrees Fahrenheit.  In a large roaster, add the chopped red bell pepper, onions, carrots, and crushed garlic.  Pour in 4 cups of water and 1 tsp Salt.  Place your wire rack (I use my toaster oven rack in my oval dutch oven for this recipe) over the chopped veggies.  Rinse your chicken and place aside.  Whisk together the ground pepper, cruhed red pepper, 1 tsp salt, lemon juice, and 3 tbsp Olive Oil.  Rub the spice mixtue over the bird, being sure to rub it under and atop the skin.

Place the bird on the wire rack, cover the roaster, and bake 2 hours.  Raise the oaven to 375 degrees Fahreneheit and bake 60-70 minutes.  Remove cover to crisp the skin.

Serve with a drizzle of the pepper juice that will resie in the roaster.  This is an excellent, healthy meal that goes well with any side!
