Summer Quinoa Salad

Who said simplicity isn't delicious?
Complexity Level:  Easy
Summer Quinoa Salad
What You Need:
2 cups cooked Quinoa*
2 Ripe Tomatoes, diced
2 Green Onions, sliced thin
1 cup Diced Zucchini
2 Mangoes, diced
1 Cucumber, diced
2 tbsp Apple Cider Vinegar
Juice of 1/2 Lemon
1 tbsp Fresh Parsley, minced
1/2 tsp Sea Salt
1/2 tsp dried Basil
1 tsp Sugar
1 clove Minced Garlic
1/2 tsp Onion Powder

In a small bowl whisk the vinegar, minced garlic, onion powder, fresh parsley, sugar, sea salt, and black pepper and set aside. 

*To cook quinoa, bring 1 cup quinoa and 2 cups water to boil.  I like to add 1 tsp salt to flavor.  Lower to simmer and cover.  Cook for about 10-12 minutes.  Once cooked, drain and rinse under cold water.

Add veggies, mangoes, and cooled quinoa into a large bowl.  Stir in vinegar blend and chill 1 hour.  Before serving, stir well.  This is fabulous as is, or alongside your favorite dishes. 

As is, this recipe is vegan and oil free.  A perfect dish for a healthy summer!
