Balsamic Glazed Beet and Mango Hash

Just Beet it!  Excellent Side for a wonderful meal!
Complexity Level:  Easy
Balsamic Glazed Beet and Mango Hash
What You Need:
2 ripe Mangos, diced
3 Large Beets, boiled and diced
1 tsp Fresh Mint, minced
1 cup Balsamic Vinegar
3 tbsp Sugar
Sea Salt
Black Pepper

To start, whisk the sugar and balsamic vinegar together, pour into a sauce pan and bring to simmer.

Meanwhile, dice the mangoes and beets and toss with a pinch of sea salt, a pinch of black pepper, and the fresh mint. 

Continuoulsy stir the balsamic mixture to avoid burning.  Lower and reduce.  Once the vinegar is a thick syrup consistency (covers a spoon) remove from heat to cool.  Because of the sugar we do need to be careful to prevent carmelizing or canding the vinegar.

Drizzle the cooled reduction over the beet hash and enjoy!  What a fresh way to spend your day!
