Low Sugar Citrus Jelly Cookies

Complexity Level:  Easy
Low Sugar Citrus Jelly Sandwich Cookies
What You Need:

4 cups Flour
1 egg
2 tbsp Vanilla
1 cup Sugar Substitute
Lemon Zest (about 1 tbsp)
Juice of said Lemon (about 1 tbsp)
1/4 tsp baking Powder
1 cup Butter (room temp and no you cannot heat to soften)
1 Jar of your Favorite Sugar Free Jam (Raspberry is my Fav!)*
*I bought Reduced Sugar Strawberry because I am poor, and it was on sale

Cut butter into flour. In a separate bowl, beat the egg, vanilla, sugar substitute, and the lemon zest and juice. Fold wet mixture into dry-- see note below*
*(the cookie dough will be drier than normal because its a cookie that

will be rolled and cut into shapes -- hence why the butter was cut into the flour -- see picture of mixed dough ready to be chilled (right)



Chill at least 1 hour. Pre-heat oven to 375 degrees. Roll out cookie dough to 1/4 inch thick, and cut into your favorite shapes (rounds are simplest). To make prettier cookies, you can cut small holes in some (to be the tops of the sandwiches). Bake 8-10 minutes, or until light brown on the edges. Remove from oven and let cool. Spread some cookies with jam, and top with another cookie. Enjoy!!

First off, YUM! Second off YUMMMMM!!! ;) These are fantastic! Substitute Orange, Grapefruit, or Lime for the Citrus/ zest and any sugar free jam you love!
