Caramelized Onion Tarts w/ Crumbled Bacon

These are incredibly simple, but yet so amazing and rich in flavor!  Bonus!!
Complexity Level:  Easy
Caramelized Onion Tarts w/ Crumbled Bacon
What You Need:
1 package (1 lb.) Puff Pastry
8-10 Onions, sliced thin
1 package, Creme Fraiche
12 oz. Bacon
Olive Oil

To start, the onions will need to be caramelized.  What seems like a lengthy process is actually quite rewarding, so do not give up!

Place 1 tbsp Olive Oil into a large sauce pan.  Add the sliced onions.  Bring to a simmer, stirring often.  I add a pinch of salt to help the moisture sweat out.  Do not try to cook these over high heat.  Once at a simmer, lower the heat to medium low, and cover.  Walk away.

Every about 15 minutes, go back and stir, cover, walk away.  The goal is to create super soft, brown caramelized onions, not crisp burnt ones.


Once caramelized, place into a bowl and cook your bacon.  You can cook the bacon in the same sauce pan the onions were in.  Anytime dishes can be reduced cooking is more fun!

Once the bacon is cooked, let it coo, then crumble it into a healthy crumble -- I say about an inch piece is perfect, but it is up to you!  These are your tarts!


Next, preheat the oven to 350 degrees Fahrenheit.  Lay the puff pastry sheets onto two different pans, first drizzling the pans with Olive Oil.

Smear the creme fraiche over the two puff pastry sheets, then place caramelized onions over each.  


Finally top with the Bacon and bake for 15-20 minutes.  Baking time is dependent on your oven.  Some may take upwards to 25, I say when golden brown you're done.  So keep an eye on the color of the pastry, and do not continuously open the oven door!

Remove and let cool 5 minutes, then cut into bit sized tarts.  These are a perfect snack or appetizer for any cocktail party or book night!

I hope you enjoy!  Man are these full of flavor!  The creme fraiche is a tangy flavor, the onions sweet, and the bacon salty and smokey.  Win Win Win!
