Semi-Homemde Chocolate Peanut Butter Mini Bundts

Semi Homemade Treats make the Holidays Simple and Delicious!
Complexity Level:  Easy
I pride myself on making everything from scratch.  Something about sifting flour, breaking a perfect egg, turning egg whites into peaks... It's just so artistic, so therapeutic.

But let's be frank.  We live in a world where not everyone find joy in the same things.  And while some are more blessed than others with patience in the kitchen.

Albeit slow cookers and just add water mixes are things that can often, become a blessing.  And so today, I decided to post a simple, but absolutely moist and fabulous dessert, that can be made "semi-homemade".

What You Need:
1 Box Chocolate Cake Mix
(mix it as directed)
1/2 cup Creamy Peanut Butter

Drizzle:
2 tbsp Oil
1/2 cup Peanut BUtter
Powdered Sugar

To start, mix the cake mix s directed.  This is normally 1 1/2 cups water, 1/3 cup oil, and 3 eggs.  What ever it states though, follow accordingly.  But before baking, whisk in 1/2 cup peanut butter.  Really whisk it in to create a smooth batter.

Bake in muffin tins, mini bundt cups, or make a full sized cake.  Either was it's going to work, and be incredibly moist!

After baking remove from the oven and let cool.  Once cooled you can start the peanut butter drizzle.


In a small double boiler, heat the 1/2 cup peanut butter with the oil, stirring constantly to combine.  Not using a double boiler risks coking the peanut butter, a texture not desirable for cakes ;)

Drizzle over the cake and dust with powdered sugar!  The Peanut butter will set, the cake is extremely moist, and I assure you the flavor is a home run!
